Home mumusings #80: Korean pancake from leftover ingredients


I haven't done Korean pancakes for months now and it's great I bought a pack of savoury pancake flour and tube of mayo from Shine Korea yesterday. Great because I'm down to a bunch of chye sim, 4 prawns, 1 sausage and spring onion.



Just 10 minutes, including preparation:

Chopped chye sim or other green leafy veg (makes little veggies look like alot)
Fresh prawns (seasoned with sesame oil and pepper)
Sausage (cut into smaller pieces)
Spring onion (lots, chopped)
Mayo

Wish I had squid and capsicum...

Method:

(1) Boil vegetables for 3 minutes. Drain off water.

(2) Mix half a bowl of water with pancake flour. I prefer to start with less water in case I create too much mixture. A bowl of mixture is safely enough for 2 adults.  Mixture should be runny, not grubby.

(3) Stir in the seasoned fresh prawns, chopped spring onion, sausage and boil vegetables.

(4) Heat pan and add some cooking oil. Pour in mixture and fry pancake for 3 minutes on each side. Medium flame or else pancake/veg will get charred real fast!




Yummy...

Use scissors to cut pancake into smaller pieces and have the dish with mayo or any other dressing you fancy. My son did part of the smiley face for one of the portions.
